Food Ink - Episode 18

Surf and Turf

  • 1 Buffalo NY Strip
  • 1 Beef NY Strip
  • 2 Petite lobster tails

Season steaks with salt and pepper
Place on hot oiled grill
Cook steaks to your desired temp
Place Lobster tails on when steaks are about 90% threw their cooking time.
Drizzle Green peppercorn steak sauce over cooked steaks

Green Peppercorn Steak Sauce

  • ¼ C Chopped shallots
  • 1 ¾ C Beef broth
  • 1 C Heavy whipping cream
  • 3 TB cognac
  • 2 TB drained green peppercorn packed in brine

Sauté shallots for 2 min
Add the rest of ingredients
Reduce until thickened

Grilled Vegetable Salad

  • ¾ C olive oil
  • 1/3 C Balsamic
  • 1 large red onion cut into ¾ rounds
  • 4 small zucchini cut into quarters
  • 1 egg plant peeled and cut into 2" strips
  • 2 med bell pepper multi color cut into 2" strips
  • 1 French baguette cut into ½" slices
  • 10 cup baby greens
  • 5 tomatoes
  • ¼ C chopped fresh basil
  • 3 TB chopped fresh chive
  • 1 C goat cheese crumbled

Grill all until al dente - grill marks, but slightly soft
Drizzle with EVOO and balsamic vinegar
Top with cheeses

Chocolate Covered Strawberries

  • 1 bag of semi sweet chocolate chips
  • 1 bag of white chocolate chips
  • 1 package of jumbo strawberries
  • 1 pastry bag or zip top bag

Melt both kinds of chocolate separately in microwave safe bowls
Let melted chocolate cool for a few minutes to thicken slightly
Pour melted white chocolate into zip top bag or pastry bag
Skewer strawberries and roll in the melted semi-sweet chocolate
Lay coated berries on wax paper
Snip a pin hole in the corner of the zip top bag of white chocolate and decorate dipped strawberries with zigzag designs

UV Pink Flamingo

  • 2 parts UV Lemonade
  • 2 parts cranberry juice
  • Splash of triple sec

Shake with ice and strain into a martini glass.
